Chef John invites you to watch the preparation of a delicious appetizer of microplants and baked sweet potatoes.
The microplants in the recipe were grown in the Babylon Garden System from certified organic seeds.
Ingredients for 2 people:

2 medium sweet potatoes

salt, pepper, cinnamon, garlic powder

1 Ishtar tray of microplants of your choice

mascarpone cheese or peanut butter

2 pieces ripe avocado
-
olive oil
-
soy sauce or honey
Preparation:
Wash the potatoes well and then pat dry. Cut into 1 cm slices, without peeling. Then brush the slices with olive oil, sprinkle with salt, pepper, cinnamon and garlic powder or any other spices to taste.
Place the slices on a baking tray and bake in the oven for 15-20 minutes at 225 °C until tender (fork goes into potato).
Spread mascarpone cheese or peanut butter on the potato slices, place the avocado slices and microgreens on top.
Then add a little soy sauce or honey over the slices.
