Microgreen bean or pea soup with shrimps

Chef John proposes a recipe for microplants with shrimp.

The microplants in the recipe were grown in the Babylon Garden System from certified organic seeds.

Ingredients for 4 people:

  • 1 medium yellow onion
  • 200 g prawns (peeled)
  • 2 Ishkar trays microplants beans/green pea
  • 2 tbsp butter
  • 150 ml white wine
  • 2 tbsp olive oil
  • 125 g sour cream 20% fat
  • 6 mint leaves
  • 1 vegetable concentrate cube
  • salt, pepper to taste

Preparation:

From the vegetable cube prepare the soup with about 1.5 litres of water, while the shrimp are left to thaw. Peel the onion and cut them julienne style, then sauté in the heated butter along with the micro beans or peas ( cut in half or more ). Deglaze with white wine, pour into the soup, add salt and pepper, then simmer for about 10 minutes.

Season the prepared soup with sour cream and season to taste. Fry the prawns for 2-3 minutes in olive oil with salt and pepper. Chop the mint and mix with the shrimp.

Serve the shrimp as they are prepared directly on the plate, whole or finely chopped.
