Avocado stuffed with tuna and micro mustard greens

Chef John proposes a tasty aperitif made of avocado and mustard microplants.

The microplants in the recipe were grown in the Babylon Garden System from certified organic seeds.

Ingredients for 2 people:

  • 1 small white or red onion
  • 1 Ishkar tray micro mustard greens
  • 4 pieces ripe avocado
  • 1 can of tuna, shredded in oil ( approx 180 g )
  • 1 tablespoon 10% Greek yoghurt
  • 1 tablespoon lemon juice
  • seed mix

Preparation:

Mix the finely chopped onion, yoghurt, drained tuna and mustard microgreens (keep a few for garnish) and lemon juice in a bowl. Season to taste.

After mixing all ingredients well, slice avocado lengthwise and peel. Fill the cavity left by the seed generously with the prepared mixture.

Add a few microgreens and seed mix on top.
